No-Bake Monster Cookie Balls

Ingredients

2-1/2 cups old-fashioned oats

1 cup creamy or crunchy peanut butter

1/2 cup honey

1 teaspoon vanilla extract

1/2 cup mini chocolate chips

1/2 chocolate candies, mini or regular

Directions

In a large bowl, stir together the oats, peanut butter, honey and vanilla until very well mixed. Stir in the chocolate chips and chocolate candies. Roll into bite-sized balls with wet hands to keep the dough from sticking to you, or use an ice cream scoop. Place the balls on a parchment-lined baking sheet and chill in the refrigerator for about 30 minutes or enjoy immediately.

Store balls in the refrigerator in an air-tight container for up to one week.
