Sriracha Peanut Noodles

Ingredients

4 oz whole wheat spaghetti (¼ package)

1 cup broccoli slaw (¼ of a 12 oz package)

1 cup edamame, shelled (defrost if frozen)

1 red bell pepper, thinly sliced

1 batch Sriracha Peanut Sauce (see below)

Toppings:

2 green onions, sliced

1 tablespoon chopped peanuts

squeeze of fresh lime juice (optional)

Sriracha Peanut Sauce:

3 tablespoons peanut butter

3 tablespoons water

2 tablespoons reduced-sodium soy sauce

1 teaspoon sriracha sauce

1 small garlic clove, minced

1 teaspoon fresh ginger, minced (optional)

Directions

Bring a large pot of water to boil. While water is boiling prepare Sriracha Peanut Sauce by combining all ingredients in a medium bowl.

Cook spaghetti according to package directions. In a large serving bowl, combine warm cooked noodles, broccoli slaw, cabbage, edamame, bell pepper, and Sriracha Peanut Sauce. Garnish with sliced green onions and chopped peanuts. Enjoy warm or chilled.
