
Ingredients
2 cups coconut milk (from a can, full fat)
1/2 cup creamy natural peanut butter
1/4 cup agave or sweetener of your choice (e.g. honey, maple syrup, stevia, etc.)
1/8 teaspoon sea salt
1 teaspoon ginger powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cinnamon
1/2 tablespoon vanilla extract
Toppings: toasted coconut flakes, peanuts, fresh fruit
Directions
Active time: 10 minutes
In a high-powered blender, combine all the ingredients (excluding the pepper flakes). Blend until completely smooth (about 30 to 60 seconds).
Transfer the mixture to your ice cream maker and follow the manufacturer's instructions to churn your ice cream.
Upon serving, top with coconut flakes, peanuts or fresh fruit.
