
Ingredients
2 sweet potatoes
2 Tbsp dark chocolate chips
2 Tbsp dried fruit (blueberries, raisins, cranberries, etc.)
2 Tbsp unsalted peanuts, chopped
Sprinkle of cinnamon
2 Tbsp plain Greek yogurt
Optional:
1 Banana, sliced
Honey Peanut Butter Sauce
1 tsp honey
2 Tbsp creamy peanut butter
1.5 Tbsp warm water

Directions
Poke holes in sweet potatoes with a fork and bake in oven (wrapped in foil) for about 45 minutes, or in microwave for about 10 minutes (wrapped in paper towel). Cut sweet potato down the middle. Combine chocolate chips, dried fruit and peanuts in a bowl, and split between each sweet potato. Top with Greek yogurt and a sprinkle of cinnamon. Add banana and/or peanut butter sauce if you wish.
Mix it up! You can make this recipe your own by using any of your favorite fruits or other toppings, like coconut flakes and chia seeds.
