Peel the bananas, then slice in half and insert a popsicle stick into the cut end. Place the bananas on a piece of parchment paper and freeze for a minimum of 3 hours. Melt the chocolate in a double boiler or in the microwave. Dip the frozen banana into the melted chocolate and place back on the parchment paper. Put back in the freezer for a few more hours until the chocolate has fully hardened. Drizzle peanut butter over the chocolate covered bananas then place back in the freezer for about 30 minutes. Remove from the freezer and enjoy immediately! Keep stored in the freezer.
