Heat oven to 400 degrees F. Using flour, roll out pastry to the size of a sheet pan on parchment paper. Place pastry in sheet pan and using hands, roll up the sides of the pastry. Prick pastry with fork all over. Warm peanut butter in microwave until it’s thinned. Spread peanut butter on pastry and arrange sliced apples on top, overlapping. Bake at 400 degrees F for 15 – 20 minutes, or until golden brown. Drizzle pastry with honey, sprinkle with cinnamon sugar and spread chopped peanuts over pastry before serving.
