When you think of a salad, what comes to mind?

Most likely, lettuce or greens are somewhere in your visual. And yes – like mama says, it’s important to eat your greens. But sometimes, you have to mix it up!

Put a fresh spin on your spring and summer salads with our no-lettuce salad recipes below. They’re perfectly portable, and fabulous additions to your next picnic, barbecue or poolside party. Not only are they delicious, but they are loaded with nutrient-dense ingredients like peanuts, peanut butter, whole grain farro, and fruits and veggies.
