Spring Vegetable Medley with Peanuts

Ingredients
1 tablespoon peanut oil
1/2 onion, sliced
2 cloves garlic, minced
1/2 teaspoon grated ginger
2 cups green beans, fresh or frozen
1 cup chopped asparagus
1 cup green peas, fresh or frozen
2 tablespoons water
1/4 teaspoon salt
1/8 teaspoon pepper
Pinch of sugar
1/3 cup chopped lightly salted peanuts
1 cup mint or cilantro (or mix)
Juice of 1/2 lime
Directions
In a skillet, heat the oil over medium high heat. Add the onions, garlic and ginger and fry for about 1 minute. Add the green beans, asparagus and peas and mix in with the aromatics, then add the water and cover to steam for 4-5 minutes. Add salt, pepper and sugar. Take off the heat and allow to cool slightly. Then, add the peanuts and herbs. Add the lime juice just before serving. Serve warm or at room temperature.
