Peanut Butter Turkey Satay

Ingredients

For the turkey marinade:

1 pound turkey breast (cooked, sliced)

2 inches fresh ginger (peeled and sliced)

4 cloves garlic

2 teaspoons cayenne pepper

2 teaspoons lime juice

2 tablespoons soy sauce

1/3 cup coconut milk

2 tablespoons peanut butter (creamy, use your favorite brand)

For the peanut butter sauce:

1 cup peanut butter (creamy, use your favorite brand)

2 cloves garlic

1 tablespoon brown sugar

1/2 teaspoon tamarind paste or lime juice

1 teaspoon cayenne pepper

1/3 cup coconut milk

2 teaspoons sesame oil

1/2 teaspoons soy sauce

1/3 cup coconut milk

1/3 cup water

Directions

For the marinade: Add all ingredients to a blender or food processor. Blend well for about 30 seconds. Pour marinade into a shallow dish. Add turkey to marinade. Set aside leftover marinade to use for basting while grilling. Marinate for up to six hours, and be sure to turn and marinate the other side too. Grill on high heat for one to three minutes or until it's browned. Turn and brown the other side. Baste side up with leftover marinade. Remove from heat.

For the peanut butter dipping sauce: Add all ingredients to a blender. Blend for 30 seconds to one minute. Add to a small bowl for easy dipping. Serve and enjoy!
