Ingredients

2 large carrots, rinsed and peeled into ribbons (use a vegetable peeler)

½ cup raisins

½ cup salted peanuts, chopped

½ cup plain Greek yogurt

1 teaspoons curry powder

Directions

Put carrots in a large mixing bowl. Add remaining ingredients and toss to coat.
