Beef Suya, Grilled Plantains, Ground Peanuts


Place thinly-sliced beef on skewers.
Ingredients for Bourbon Apricot Dried Fruit Compote:
1 quart apricots, chopped
2 cups dates
1 cup currants
1 cup golden raisins
1 cup white dried figs, sliced
1 cup red onion, shaved
2 Asian pears, medium size, diced
2 cups bourbon
1 quart chicken stock, as needed
2 lemons, juiced and zested
Salt to taste

Combine all ingredients and simmer until fruit is reconstituted and alcohol is cooked out.

Ingredients for Ground Peanuts:
2 cups peanuts

Heat the oven to 365 F. Toast peanuts for 10-15 minutes. After peanuts are completely cooled, use a food processor to grind peanuts.
