Zesty Lime and Ginger Peanut Marinade
Ingredients
2 tablespoons peanut flour
1 tablespoon water
1 teaspoon tamari sauce
1 teaspoon fresh grated ginger
1/2teaspoon fresh lime juice
1/4 teaspoon fresh lime peel, grated
1/2 teaspoon finely chopped fresh mint
Directions
In a small bowl, stir in peanut flour and water to form a paste. Stir in remaining ingredients. Will have a thick paste-like consistency. Rub over chicken as marinade.
